Joyful Week no. 14
Welcome to another Joyful Week here at Proof & Parchment. This week I want to start out by celebrating Father’s Day! I’m also sharing a really good book The Tao of Pooh plus an old recipe that I love and have cooked countless times that you must try asap. This was definitely a great week and I hope something brought you joy too.
Happy Father’s Day!
Father’s Day is definitely the biggest joy from the past week. And even though I didn’t see my dad in person I did get to talk to him and wish him a wonderful day! He is the best role model and I definitely wouldn’t be where I am without him. So to my dad and all the other amazing dad’s out there Happy Father’s Day!
The Tao of Pooh
I’m starting to get back into reading a little bit more instead of always being on the computer or just listening to podcasts and books. I started out with a book I’ve had forever and have started to read a few other times and while it’s a pretty short read it is full of so many good nuggets of wisdom & joy! I’d highly recommend The Tao of Pooh as a good addition to your library.
Here’s my favorite passage:
Do you want to be really happy? You can begin by being appreciative of who you are and what you’ve got. Do you want to be really miserable? You can begin by being discontented. As Lao-tse wrote, “A tree as big around as you can reach starts with one step.” Wisdom, Happiness, and Courage are not waiting somewhere out beyond sight at the end of a straight line; they’re part of a continuous cycle that begins right here. They’re not only the ending, but the beginning as well. The more is snows, the more it goes, the more it goes on snowing.
Kale & Quinoa Patties
I am here sharing another recipe with you this week and I can’t tell you how many times I’ve made these patties because they are that good! The recipe is from Joy the Baker and she calls them Kale & Quinoa Cakes. Every single time I make them I always wonder why I don’t make them all the time. They are pretty perfect with the crispy quinoa and kale on the outside and chewy on the inside with bits of cheese & sun dried tomatoes throughout them. This recipe makes a ton of patties and they are so easy to reheat and eat all week. So if you need a new recipe definitely try these out plus they are great for any and every meal.
Bonus tip, have them for breakfast with a dippy egg on top for a real treat!
